Menu Plan Monday - January 24, 2022

 


So, it's been forever since I posted a Menu Plan Monday. Today, I just felt like doing so. It seems that I have been feeling a little down in the dumps, maybe just tired of all of the arguing, the high prices, increase in crime, lines being drawn in the sand ... you know what I mean. Since cooking and writing are both passions of mine, or at least they used to be, I am counting on them once again for creativity and a little more joy. And in case you've ever wondered, you can feel depressed and still have joy. Joy is not the same as happiness and it is not dependent upon your circumstances, but rather on your express choice to praise God for who He is. 

That's where I am at tonight as I type in this menu plan. I know it is a basic plan, but I have jury duty this week and with my job, it's enough to keep me pretty busy.

Menu Plan Monday - June 7, 2021

 


I have taken a break from blogging for a short while, mostly due to busyness, but also due to just feeling as if nothing matters in this world, least of all homemaking. However, while I am still busy, I also believe that having a voice about conservative things - and homemaking as well - matters. The United States of America, as well as the rest of the world, is in a bit of *Ahem* disarray. Everyone is looking for something or someone to solve their problems. But the fact of the matter is, there is nobody or no thing that will do the job other than Jesus Christ. Today I can continue blogging and talking about what matters to me - faith. We still have that freedom and I refuse to take it for granted.

I also believe that planning is important, but I don't hold too tightly to it. I plan with the knowledge that tomorrow is not guaranteed. I plan while keeping in mind that "God willing" I will be able to complete a task or a trip or whatever. And menu planning is at the top of my list. It helps me stay organized and I never have to waste time wondering what's for supper. I only have to look at the list on my refrigerator.

My garden is hopping right along and that means fresh vegetables for the table and maybe a full freezer and pantry for the winter months later on.

Menu Plan Monday - January 25, 2021

 

Our warm winter is coming to an end and the cold has begun in earnest. I guess that we people in the northern part of the country should expect that, but of course it throws us into a tizzy when it happens. December and January is not normally nearly as warm as it has been (sometimes days with temperatures well above freezing) so I will be grateful for what I had.

On Friday, I went to the barn to feed my two ewes when I took a peek into my daughter's goat stall. Standing there was a tiny buckling, dried off but shivering. We left him with his mother until Saturday morning, but noticed then that he was very cold and could not nurse. After some research, we determined that he was hypothermic and simply could not latch on enough to nurse. At that point, we had to bring him in the house and get him warm really quick. We did give him supplements along with colostrum from the mother goat. Well, long story short - when this happens you just have to keep the baby inside in the warmth until the cold snap ends or he's big enough to withstand the temperatures. 

So...we are keeping this little guy in the house and bringing him outside every two to three hours (with a doggie jacket on) to nurse from his mother. Then, we take a screaming baby from his screaming mother and bring him back inside, where he basks in the warmth on the hearth rug in front of the wood burner. No kidding. Lots of fun. By the way, this is a nigerian dwarf goat and he's really tiny. Right now he's 5 lbs. and gaining weight slowly. Lots of energy and pretty spunky when he's not sleeping.


For this week's menu plan, I decided to do some warming soups. Thursday has become our left-over night, but often I find we don't have left-overs. We do have grown boys that eat a lot 😃. On those days, I just search through the freezer and pantry and try to come up with something easy. Sometimes it's a package of hot dogs (which I loathe but they can come in handy) or a can of whatever. I do prefer to have a plan, though. Here's mine:

Menu Plan Monday - January 18, 2021

 

Many years later, and I'm still getting most of my recipes from my collection of cookbooks - real ones that I can hold and sift through. I took most of my menu plan this week from the three books below: The Ohio State Grange Cook Book, Conservation Officers Cooking T.I.P.S., and my mother's handwritten Favorite Recipes. In March of this year, my mom will have been in Heaven for five years. I still miss her dearly and making some of these dishes gives me comfort. After the plan I will share a recipe from that little book.

Creole Beans

2 1/2 cups of green beans
1 TBSP chopped onions
2 TBSP olive oil
1/2 tsp. salt
1/3 cup chili sauce

Cook onions on medium low in oil until soft. Add beans and salt. Cook until heated through, stirring often. Then add chili sauce and heat well.

Menu Plan Monday - January 4, 2021

 


So, what to create for dinners (or as we Hoosiers always say, suppers) this first week in the year 2021. If I'm honest, I will admit that my heart isn't really in the menu plan this time, but that's the way it goes. When you are a planner and someone who likes to have everything structured, you continue to go ahead with the plans regardless of how you feel. Yesterday, I looked through my pantry and freezers before throwing together a plan. 

That's the best way to prepare a weekly menu, you know. The late planning is not ideal, but deciding what you want for meals by using ingredients that you already have on hand is. Being wise in all aspects of our lives is important and spending extra money at the grocery store to prepare whatever sounds good at the time is not the best thing. I want to save money, not spend it all needlessly.

Then, there's the whole thing about how I wanted a large garden and tons of canned (frozen and dried too) goods available in the winter. Now it's winter and I need to be using those foods to feed the family nourishing food. One vegetable that I grew a lot of this last summer is squash. I ran out of good storage places for squash, so I decided to put them under our bed. I read that this is a good idea. I'm happy to say it has been a fantastic place, as the squash are still in great shape and we have been enjoying them since harvest in September.

Happy Menu Plan Monday - the last in 2020.

If you're anything like me, I think you will agree that 2020 has been less than desirable and an end to it sounds grand. While our calendar changes to another year, however, please keep in mind that God's perfect timing does not include parameters such as the Gregorian calendar. That's sort of for us because we have such finite minds ....

I have slipped on posting my menu plans and hope to rectify that by being more consistent. I have, however, been very good at planning and posting my menu on our refrigerator for the family to see - and stop asking what's for supper.

I hope everyone had a wonderful Christmas and best wishes to the new year ahead. I don't think that things are going to look any different than they do now and probably won't be any better, but that doesn't mean that we can't celebrate the freedoms that we do still have. And we can still feast with whatever we have available.

Menu Plan Monday - June 25



Summer has finally arrived in northern Michigan. We have our hot days and we have our normal rather cool days. Today it has struggled to reach 70 degrees F., but that's okay.The sun is shining and I'm happy.

The menu plan this week reflects using what we have on hand. I have already over-spent at the grocery store. Our freezer is becoming bare and I can't wait for the harvesting of our garden. Right now, we are only getting a light cutting of lettuce and some radishes. As for the cantaloupe for tonight, we only use whole melons that we cut ourselves. Currently in Michigan, we are advised to not purchase cantaloupe already cut and packaged because of the listeria problem that has caused a massive recall.

Menu Plan Monday - June 4


Happy first Monday in June! I would like to say that we have beautiful summer-like weather here up north, but that would be a lie. It struggles to get into the sixties (Fahrenheit) right now. For me, that is frustrating.

My husband has the week off of work, so he is helping to make some of the suppers. Since he makes a mess when he cooks, I'm not sure if that is a blessing or not. I will let you know.

I don't have a vegan plan for you this week. To be honest, I have jumped off of the vegan ship for a bit. My digestive system was way out of whack because of all of the carbohydrates I was getting that I needed to get more variety. I am feeling better and will slowly add more carbs back in. That said, I will let you know that I am still whole foods, mostly plant based, just not eating starchy carbs at the moment.

The snow is finally melting and I can see the light at the end of the tunnel. It is currently (at 5:50 p.m.) 69 degrees here in the north and sunny! Isn't God good? After all, He did promise that the winter would not last forever (seasons change until He returns). I am so grateful for the warmth and the promise of summer.

Happy April 9, 2018 - I think. We still have snow here. Yesterday, there were snowmobiles everywhere having a lot of fun in the two to three feet we have on the ground. With warmer temperatures on the horizon, and I'm talking highs in the low forties, perhaps some of the snow will melt and we can have a real spring.

Menu Plan Monday - March 12


It's still snowing and cold here, so I am including warming dishes in my menu plan. As for the vegan planning, prepping, and enjoying - I'm loving it, even with all of the extra work. Tonight, we are having a slight surprise for the family. I have made a vegan strawberry cobbler that fits in very well with the whole foods plant based diet. By not telling the rest of the family that it is vegan, I bet I will find an empty dish when I get home from work. Since I am so confident with the WFPB diet, I am now showcasing that one first, followed by the meal plan for the meat eaters. The recipe for the strawberry cobbler is below:

Vegan Strawberry Cobbler

1 1/2 cups almond flour
1 tsp. salt
1/4 cup honey
2 TBSP real maple syrup
2 quarts strawberries
1 cup water
2 TBSP instant tapioca
2 TBSP unsweetened applesauce
1 tsp. almond extract

Using a food processor or mixer, blend the almond flour, salt, maple syrup, almond extract, and applesauce together. It will be a little moist and sticky. In a pan, put strawberries, honey, and water over medium heat and cook until berries come to a boil. Remove from heat and stir in tapioca. Transfer berry mixture to a lightly greased baking dish. Top with spoonfuls of the almond dough. Bake at 350 degrees Fahrenheit until bubbly and the dough is browned.

Menu Plan Monday - February 26


Yippee for the last Monday in February! I, for one, can't wait for summer. You heard me. I could easily skip spring and go straight for the hot stuff. Up here in the northern part of Michigan, spring isn't promised and it's usually so much like winter that you wonder if it was ever there to begin with.

As for the menu plan, I am providing one plan for the family who refuses to go whole food, plant based along with me. I am continue to make a plan for myself. The diet is working splendidly. I remain a steady 105 pounds and am enjoying lots of carbs and grains. However, the carbs are all complex carbs that come straight from the food itself. Sugar, for me, is rare. Do I feel healthier? Sometimes. I have allergies and hope they will someday be a thing of the past. As for now, I am plagued by them.

The following plant based plan is mostly taken from Easy. Whole. Vegan., by Melissa King. I borrowed the book from inter-library loan and love it so much that I ordered it from Amazon. It's on its way.

Menu Plan Monday: Two Menus - February 17


Good morning! I am ready to report how I liked the sample menu plan from Forks Over Knives. For the most part, the meals were tasty and very filling. I had asked for the plan for a single person, as I am the only one in our house who eats vegan. Every meal made two servings, which gave enough for a lunch or breakfast left-over for the week. Well, as I am a small person and don't require the same calories as a taller, larger boned person, I found that the two meals were more like three or, sometimes, four. At first, I tried to get it all eaten in two meals but then felt overly full and sick. By the end of the week, I was putting a serving in the freezer for a later date.

The Forks Over Knives meals were great, as I already said, but one of them, Peanut Noodles, did not set well, either the first round or the left-over round. I suspect it is because I have an unhealthy digestive system and the peanut sauce is just too hard to digest (I have had trouble with peanut butter before and now eat sunflower seed butter or, on occasion, almond butter). Other than that, it was all fantastic.

This week, I have planned my own menu, as well as the menu for the rest of the family. As a side note: I am sure our grocery bill would not be nearly as high if I could stop purchasing meat. I ended up paying $200 at the grocery stores (yes, plural) yesterday because I had to buy meat and dairy. Looking at my receipts, I found that meat was most expensive, with dairy second. Fruits and veggies were just a tiny fraction of the total bill.

So, I think I have a menu plan to fit most anybody, except maybe Paleo eaters. There might be something in there for them too, but not whole meals. I like to use healthy carbohydrates in my plans. I am posting my plans for dinner only, however, I did plan for all three meals for every day with the vegan plan. Please message me if you are interested in seeing that. Have a good week!

This week I have only one menu plan for you, but next week I will have two. That is because I signed up for the Forks Over Knives sample weekly planner and am sampling the menu they gave me this week. Next week, I am making my own plan to see how it goes. By comparing how long it takes me to do this on my own with how long it takes me with an already prepared plan, I will know if I can afford to invest in this thing. One thing I already know is that I can't eat the food that the rest of my family does. I get sick if I do. A whole food plant based diet seems to be the best thing for me and I plan to do whatever I can to make it work.

Over the weekend, I made up lots of vegetable soup for the refrigerator and freezer. This kind of planning has given me a little more freedom during the week, and it has ensured that I will have something to eat when the carnivores are having their meals. In a whole foods, plant based diet, planning is everything.

Menu Plan Monday - January 22


I am still on track with my whole foods plant based diet. It is going well. The first week, I didn't think ahead enough to prepare myself meals to have while the rest of the family ate meaty/fatty meals. This weekend, I prepared a homemade vegetable soup with yellow potatoes, carrots, celery, onions, frozen corn, organic canned kidney beans, and a pint of my own home grown, home canned tomatoes. I used some organic vegetable broth mixed with water as the base. I added my own dried oregano and some freshly ground pepper and salt. I don't know the ratios. I made it up and it is delicious! I have enough to last me most of the week for lunches or light supper.

I also prepared a pot of lentil sloppy joes. It too is delicious. I ended up freezing some of it for later, as the recipe made more than I think I can eat in a week. I also made some tostones. Again, delicious!

I make tostones periodically and always freeze them between waxed paper. I just mash up two large plantains and put a cup of black beans, a cup of gluten-free flour blend, some chili powder, salt and pepper in the mix. Drop by spoonfuls and bake at 350 F until dry and cooked.

The last thing I made was a gluten-free banana bread. I like it for breakfast sometimes.

Menu Plan Monday - January 15


This is week two of my resolve to eat purely whole food plant based foods. It's hard to tell if I feel a lot better than before since I am working many more hours than normal this week and last.

I have been researching meals in the 17th and 18th centuries. Talk about eating lots of meat and fat! Some of the most interesting cookbooks are: Susannah Carter's The Frugal Housewife, Or Complete Woman Cook, Amelia Simmons' The First American Cookbook: A Fascimile of "American Cookery", and The Compleat Housewife by Eliza Smith. I can only imagine living in those times and eating all of that rich, fatty food. My stomach revolts just reading about them. Still, I greatly admire the women who were able to take a hunk of something and turn it into a meal that their families devoured.

These days, I am preparing meals that may have started out fatty and filled with cholesterol, but have been transformed by my need to eat less fat. By the way, I have read all of the books out there, plus the internet plethora of information concerning "healthy fats". When your body cannot digest those fats, none of it is healthy. Just saying.

Menu Plan Monday - January 8


Today is warmer than it has been lately! It is now in the 20's, whereas the temperatures dropped below zero for a couple of weeks ago. Saturday morning we awoke to 20 below! So, 26 degrees F. is balmy. For those really cold days, I go to warming foods like potatoes and rice. I know lots of people are on the low-carb kick, but I find that I need those whole foods that warm my body and keep my full for longer periods of time. Meats and fats continue to make me ill, so I have cut them out completely - for me, that is. The rest of my family appears to be strongly against any sort of vegetarianism or veganism. I am not really either of those. I am focusing on whole foods while eliminating animal proteins. And yes, there is a difference. Vegans often eat quite a bit of processed foods and healthy fats. I can't have those.

Menu Plan Monday - December 11


Is it snowing where you are? I am told that even in the south where it rarely snows, there is the fluffy, white stuff. We, of course, have a lot of it. It wouldn't be northern Michigan's snow belt if we didn't. With the cold and snow, out comes the slow cooker a little more often. Tonight's chicken is done that way, with lots of lemon pepper sprinkled on.
