Gluten-free Chocolate Brownies with Coconut and Hazelnuts

 


If you've ever wanted to make a moist, chocolaty gluten-free brownie that is not made with rice flour, this one might be for you. 

Many good brownie recipes use butter for the fat. I swapped out butter and used coconut oil instead. I also added shredded coconut and hazelnuts to give the brownies texture. Just to use up some homemade rhubarb sauce that I had in the fridge (sweetened with honey), I added it to the batter. The result was fiber along with honey and a special sort of sweetness.

The recipe for regular, gluten filled brownies that I make for my family (other than me) uses lots of sugar. I decided to opt out of the normal refined sugar and used coconut sugar instead. You could swap out for white sugar or even brown sugar if you wanted to. I would shy away from using much liquid sweetener as that might make the brownies too soft. 

For the fruit, applesauce would be good, as well as raspberries or strawberries. If not using a sauce or jam, cook the fruit a bit to give it some juiciness.

To top it all off, I salted the top of the cooked brownies while still very hot with coarse sea salt. Delicious!



Gluten-free Chocolate Brownies

1/4 cup coconut oil, melted (plus more for greasing the pan)
2 eggs
1 cup coconut sugar
1/2 cup oat flour
Scant 1/2 cup cocoa powder
1 tsp. vanilla extract
1/4 tsp. baking powder
1 TBSP cacao nibs (optional)
1 TBSP shredded, unsweetened coconut
1/2 - 3/4 cup fruit sauce or jam
Handful of blanched hazelnuts (or other nut)
Course Salt

Cream sugar and coconut oil. Add eggs and beat well. Then add oat flour, cocoa powder, vanilla, and baking powder and stir well. Stir in coconut, nuts, and cacao nibs if using. Add fruit sauce or jam last and stir until well blended.

Spread the batter in a 9 inch square pan that has been greased with coconut oil. Bake in a 350 degree oven (Fahrenheit) for roughly 30 minutes. Begin checking with a toothpick for doneness at 25 minutes. Immediately after taking brownies from the oven, lightly salt the top with coarse salt.

Menu Plan Monday - September 18

I found an interesting cookbook this week. This one is filled with easy and quick gluten-free recipes. Last night I prepared the Waldorf Salad for my husband. He said he loves it and would I please save the recipe. Many of the meals on my menu plan this week include items made from this cookbook, 100 Best Quick Gluten-free Recipes by Carol Fenster. I have denoted these with an asterisk. If you find the recipe book at your library, please check it out and see if any of the recipes fit your lifestyle!

By the way, I made the zucchini butter on Saturday and it is wonderful!

Menu Plan Monday - September 15

Lately, I've been spending a lot of time thinking about healthy eating choices. I have gone back and forth as a poor, junk-food eater, a vegetarian, a vegan, and then back around again. This week I resolved to go back to a more vegetarian (getting close to being vegan) diet again. When I eat meat, I find that my muscles hurt. Apparently, I am not the only one who feels this way. If you want to read a short, but interesting, blog post concerning pain and food, you can find one here. That said, I cannot interest the rest of my family to follow suit. As an aside, I firmly believe (based upon testimonies from people I know personally who have kicked cancer in its worst forms) that juicing is one of the best things you can do to squash inflammation. If you don't like vegetables, try carrot juice blended with an apple or pear. I've thrown in a kiwi before, though my husband swears only apples will sweeten it to his liking. Myself, I prefer straight carrot juice with, perhaps, a couple of leaves of romaine lettuce or kale. I tried tossing in a radish once but, wow, that was hot! The point is, get your body trained to eat as God intended you to and you will reap enormous benefits! My menu plan for the week includes meals that I do not feel are healthy but, because of my family's resistance to such options, I have tried to compromise a bit. I usually don't have what they're having - rather I make a large salad or otherwise. Maybe they'll see a difference in my own health and change their ways someday.

Health issues are plaguing our family, as they have for a couple of years now. First it seemed that the mold problem in our house could be causing them. Now it appears that maybe it's really the food we've eaten. By that, I mean that additives and GMOs have, possibly, directly and indirectly caused some autoimmune struggles for members of our household. Because of that, I have  been striving to present better choices at the table. The only way to really eliminate most GMOs and additives (such as MSG and other toxins) is to prepare your own food - skip the processed junk that is in the middle aisles of your grocery store. Shop the periphery. Read labels and don't buy anything that has ingredients in it which you do not recognize as good. Eat organic when you can. And if you visit farmer's markets, don't take it for granted that they all sell organic foods. Ask each and every vendor some hard questions.

When making the re-fried beans in the recipe listed below, I always soak them the night before, draining and rinsing them well before cooking. Soaking them before cooking makes them easier to digest.

Menu Plan Monday - December 30

Well, this dismal year 2013 is nearly finished. I say dismal because we spent the better part of it fighting our son's Henoch-Schoenlein Purpura (auto-immune disease) mostly in a hospital downstate. It was rough. We are looking forward to a sunny and bright future, however, as his kidneys are now healing and he doesn't show many signs of the disease re-occuring. The Lord is blessing him.

Here is my plan for the week's meals:
