Happy Monday! I have been having loads of fun going through some vegan cookbooks. My doctor prescribes a very low fat diet for me since I have severe acid reflux. The vegan diets, especially like that espoused by Forks Over Knives, works well for me. Granted, I haven't got that diet reflected in the menu plan I am posting today. Stay tuned for some great vegan ideas, however.
