Menu Plan Monday - August 24



I made a great gluten-free bread the other day and want to share it with you. It is the best I have had, including that which the Udi brand makes. This bread is soft and reminds me of wheat bread. The taste is sweet and it makes great toast.


Gluten-free Bread Machine Bread

1 1/4 cup plus 1 Tablespoon milk
1/3 cup honey
2 large eggs
1/3 cup oil (I used olive)
1 1/2 teaspoon vanilla extract
1/3 cup brown rice flour
1/3 cup tapioca starch
1 1/4 cups potato starch
1 pkt. active dry yeast
1 teaspoon salt
1 1/2 teaspoon guar gum (could sub. xanthan)
Place ingredients in order listed in bread machine pan. Set to "gluten-free" setting. Makes 1 1/2 lb. loaf. Loaf should slide right out of pan onto a cooling rack. Allow to cool completely before slicing or removing the paddle wheel if stuck in bottom of loaf. Store in a sealed ziplock bag inside of the refrigerator.
