Gluten-free Bread Machine Bread
1 1/4 cup plus 1 Tablespoon milk
1/3 cup honey
2 large eggs
1/3 cup oil (I used olive)
1 1/2 teaspoon vanilla extract
1/3 cup brown rice flour
1/3 cup tapioca starch
1 1/4 cups potato starch
1 pkt. active dry yeast
1 teaspoon salt
1 1/2 teaspoon guar gum (could sub. xanthan)
1/3 cup honey

Place ingredients in order listed in bread machine pan. Set to "gluten-free" setting. Makes 1 1/2 lb. loaf. Loaf should slide right out of pan onto a cooling rack. Allow to cool completely before slicing or removing the paddle wheel if stuck in bottom of loaf. Store in a sealed ziplock bag inside of the refrigerator.
