I am having a bit of fun with NaNoWriMo. I really didn't think that I would. After all, 50,000 words in 30 days is a bit much. Amazingly I am at 12,335 words as I type this blog post. I have about 1,000 more to keep on my schedule of 1,667 words a day (or night, in my case). Because of this crazy time stealer, I have little time to prepare big meals - and I have little money too! So, here is my simple plan for the week. Some of the recipes are included below the menu. Cheesy Sloppy Rice Joes
1 1/2 lbs lean ground beef
2 cups cooked white rice
1 cup chopped onion
1 pound cubed process cheese
3/4 cup ketchup
Hamburger or hot dog buns
In a 12" skillet, brown meat and onion until meat is cooked through and onion is tender. Drain fat. Place meat in a large slow cooker with rice, ketchup and cheese. Mix well. Cover and cook on low heat setting for 2 to 2 1/2 hours. Serve meat and rice mixture in toasted buns.
