This week's menu shows pizza twice in a row on purpose. Thursday is our normal family night with homemade pizza and pop. This week, Evan is having a birthday on Wednesday. I always allow the children to choose their favorite meal for their brithdays and Evan has chosen pizza. A dear friend gifted us with a bunch (and I mean a bunch) of frozen Schwan's pizzas so we are going to use them for the birthday dinner. This friend also gave us frozen soft pretzels and we're going to eat those too!

*Country Potatoes*
Boil 4 potatoes in skins and refrigerate overnight. Peel and grate. Combine with potatoes: 1/2 can cream of chicken soup, 1 cup sour cream, 1 T. minced onion, 1/2 t. salt, 1/4 t. pepper, 1/2 cup grated cheddar cheese. Place in buttered 1 1/2 quart baking dish and top with 1/2 cup crushed Corn Flakes and 1 T. melted butter. Bake at 350 F degree oven until bubbly and beginning to brown. Serves 6.
