Rhubarb

Do you like rhubarb? I harvested some today off our established plant. We planted two more this spring, so hopefully in the next year or two we'll begin to reap a larger harvest. My daughter (and most of the boys) love rhubarb, especially made this way:

In a bowl, combine 1/3 cup very soft butter or margarine, 1/3 cup powdered sugar, and 1 cup flour. Mix very well and then press into a glass baking dish. Bake at 350 for about 10-12 minutes.

In the meantime, place in a bowl: 1 cup of sugar, 2 eggs, 1 teaspoon vanilla extract and 2 cups of chopped rhubarb (you can use frozen if you partially thaw and drain off any liquid). Stir rapidly and well with a spoon. Pour over the hot crust and continue baking for a half hour or until a knife inserted near the middle comes out fairly clean. Great warm or cooled. I keep left-overs in the refrigerator.

Another way we enjoy rhubarb is in a custard pie. Well, I hate the pie but everyone else enjoys it.
