This has been a week of getting caught up with stuff - we decided to take a break from home schooling since the public and private schools were off and we ALL needed a break. I never got around to making the pot roast or beef & noodles I had on last week's menu plan, opting for Christmas leftovers instead. On Friday, I used the leftover ham in a huge batch of scalloped potatoes. Yesterday we ate taco salads and I made this really great batch of sweet potato patties.
To make sweet potato patties, mash leftover sweet potatoes and add a beaten egg. Drop the mixture onto a buttered baking sheet as you would drop cookies. Bake at 350 degrees F for about 20 minutes or until slightly browned on top. These were terrific and something we'll make again.
