I am having a bit of fun with NaNoWriMo. I really didn't think that I would. After all, 50,000 words in 30 days is a bit much. Amazingly I am at 12,335 words as I type this blog post. I have about 1,000 more to keep on my schedule of 1,667 words a day (or night, in my case). Because of this crazy time stealer, I have little time to prepare big meals - and I have little money too! So, here is my simple plan for the week. Some of the recipes are included below the menu. Monday

Mixed Vegetables
Garden Salads
Homemade Yellow Cake sprinkled with confectioner's sugar

Tuesday

Turkey Sausage & Cabbage (just fried together)
Pasta Salad

Wednesday

Pancakes
Scrambled Eggs
Toast & Jam

Thursday

Pizza & Pop (with a movie)

Friday

Garden Salads
Canned Apricots

Saturday

Creamed Red Potatoes & Peas
Cheesy Sloppy Rice Joes
Pies (if I have time)

Sunday

On Your Own

Cheesy Sloppy Rice Joes

1 1/2 lbs lean ground beef
2 cups cooked white rice
1 cup chopped onion
1 pound cubed process cheese
3/4 cup ketchup
Hamburger or hot dog buns

In a 12" skillet, brown meat and onion until meat is cooked through and onion is tender. Drain fat. Place meat in a large slow cooker with rice, ketchup and cheese. Mix well. Cover and cook on low heat setting for 2 to 2 1/2 hours. Serve meat and rice mixture in toasted buns.
