Menu Plan Monday

This has been a week of getting caught up with stuff - we decided to take a break from home schooling since the public and private schools were off and we ALL needed a break. I never got around to making the pot roast or beef & noodles I had on last week's menu plan, opting for Christmas leftovers instead. On Friday, I used the leftover ham in a huge batch of scalloped potatoes. Yesterday we ate taco salads and I made this really great batch of sweet potato patties.

To make sweet potato patties, mash leftover sweet potatoes and add a beaten egg. Drop the mixture onto a buttered baking sheet as you would drop cookies. Bake at 350 degrees F for about 20 minutes or until slightly browned on top. These were terrific and something we'll make again.

For this week (only suppers are listed here - lunches are just leftovers or sandwiches) --

Pot Roast with potatoes - in crock pot
Savory Green Beans
Pasta Salad
Cookies and Fruit

Beef & Noodles (using leftover beef from Monday)
Mixed Vegetables
Peaches and/or Pears (home canned)

Green Salads

Pizza and Pop

Broiled Pork Chops
Baked Potatoes
Brussels Sprouts

Mexican Fried Cornbread
Applesauce (our own frozen)

On Your Own

There are more menu plans listed at Organizing Junkie, so visit if you get the chance.
