I had a difficult time planning this week's menu. Not sure why - maybe I don't have much on hand in the freezer? Maybe it's because the grocery bill is getting so high that I have a difficult time planning meals that I can afford and that also suit all of the various food preferences and diet plans in our household. Speaking of diet plans, we decided to try putting our 13-year-old daughter on a dairy free diet as well as continue her gluten-free eating style. She has continued to struggle with stomach aches accompanied by lots of eczema. Going dairy free has not been easy for her (she loves cheese and ice-cream), but it does seem to be helping her feel better. She does like Silk Dairy-free Ice-cream (I don't like her to eat soy, though). We're still trying to find a dairy-free cheese she likes. At any rate, the meal plan I came up with follows:

BLTs on gluten-free bread
Applesauce
Tuesday
Baked Rigatoni
Green Beans
Gluten-free Garlic Toast
Wednesday
Chicken and Rice Casserole (dairy-free)
Steamed Snap Peas
Thursday
Butternut Squash Chili
Friday
Pizza and Pop
Saturday
Burgers on the grill
Potato Salad
Sunday
