Ham Salad - Make Your Own

I made ham in a crock pot the other day and had a bunch of left-over. My husband was getting tired of having sliced ham sandwiches in his lunch bag, so I found this recipe for ham salad in my batch of tried and true recipes. Really, considering the cost - and high amount of additives - in store bought ham salad, I really appreciate this home-made version. It's gluten-free, sugar-free, and tasty. Unfortunately, it isn't sodium free :(


 

Ham Salad from Scratch

1 pound cooked ham (not deli ham), chopped
3 small stalks celery, finely diced
1 large dill pickle, finely chopped
1 TBSP prepared mustard
A few shakes of onion powder (or chopped onion to your taste)
1/2 cup mayonnaise
Shake of salt if you like things salty - ham has enough sodium without it
1 TBSP lemon juice

Put cooked ham through a food processor until it is ground to your liking. Put it in a mixing bowl with the remaining ingredients. Stir until blended through. Spread over bread or serve with crackers.

I am gluten-free, so I like to have this with leaf lettuce.
