Last week I switched out coconut oil for shortening and butter in my cooking and had wonderful results. As shortening goes, I had already made the switch from hydrogenated oils for palm oil. The coconut oil, however, has a better flavor than palm oil, in my own opinion. Coconut oil is particularly good in pie crust.
