Well, I'm quite late at posting Menu Plan Monday this week. No matter, there are literally hundreds up at Organizing Junkie's site. You can spend a whole day looking for ideas for your own menu.
I had a fantastic time at the Big Ticket Festival on Saturday even though my legs ached from standing on them all day directing traffic to the parking lot. It was worth it, though, when I sat for a couple of hours watching and listening to Casting Crowns. Wow! If you ever get a chance to attend one of their concerts (which they claim are not concerts but worship services), do it. You won't be disappointed.
Here's my menu plan for the week, mostly taken from our Indiana Conservation Officer's Cookbook.

1 egg, beaten
1 tsp. salt
1/4 tsp. pepper
1/2 c. Quaker Oats, uncooked

Hamburger Buns
Combine ground meat, egg, seasonings and oats thoroughly. Shape into 16 patties; top 8 of them with an onion slice. Cover with remaining patties. Pinch edges together to seal in onion. Place on broiler rack. Broil 4 inches from heat source for 7 minutes. Turn and broil 5 minutes until medium done.Serve with chili sauce on toasted buns. Serves 8.

That spicy vegetable chili looks really good. I'll have to give that a try.
