Already this healthier eating routine is becoming difficult. I am resolved, however, to work toward that goal to the best of my ability. Because everyone is balking at me cutting most desserts out, I'm going to put a few back in. This week we'll have vanilla pudding, though it will be made with nonfat dry milk. I will make the chicken enchiladas with skim milk as well - and reduced fat cheese. The only meal we can't seem to cut is the pizza night. My entire family refuses to "mess with" it. Sigh.

MMmMMmMMmm I love pizza night.
I love your on your own Sundays. It seems lately I plan something for Sunday and then something then comes up or we eat leftovers from one night that week. I am also glad to see that I am not the only one that has to make two different pans of enchiladas. The kids wont eat them with meat, so I always put some cheese ones together. Although my oldest wont eat that either so he will eat cereal or something. :-)
