Menu Plan Monday - running short on ideas


I'm starting to run short on creativity. Last night we had a birthday party for our son and I didn't spend any time on my menu plan.....I know, it doesn't pay to put it off until the last minute! Well, this is what I've come up with - with a little help from son #2, the vegetarian. He frowned heavily when I scribbled in Saturday's menu. ** means recipe follows at the end of this post.

All-American Meat Loaf **
French Fries
Peas

Tuesday

Chicken Enchiladas & Cheesy Onion Enchiladas
Spanish Rice
Apple Cake

Wednesday

Brown Sugar Butternut Squash
Loaded Baked Potatoes
Brownies

Thursday

Pizza & Pop

Friday

Vegetable Soup
Green Salad
Pears

Saturday

Roast Beef in crock pot
Potatoes
Carrots
Homemade Bread

**All American Meat Loaf** (from the Crock Pot recipe book)
1 1/2 lb. lean ground beef
2 cups bread crumbs
1 cup ketchup
1/2 cup onion, chopped
2 eggs, beaten
1 tsp. salt
1 tsp. black pepper
2 Tbsp. tomato paste
8 slices cheddar or American cheese, cut into strips

In a large mixing bowl, combine all the ingredients, except for the cheese and tomato paste. Shape half of the meat mixture into a loaf. Arrange 8 cheese strips on the meat, and top with the remaining meat, pressing edges together to seal. Place in the Crock Pot slow cooker. Top with the tomato paste and remaining cheese slices. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

Well, back when I had to do that daily meal for a family cooking thing the hardest part was planning the weekly menus. Then the list, shopping, and cooking weren't so bad. But I hated sitting down with a pencil and figuring it all out. And I had to do a week at a time 'cause I only got to the store one day a week.

I'm so uncreative about food that we rotate between about five meals, day after day.
