Smoky Hot Dish

Need a frugal recipe to feed a family? Meat is one of the most expensive grocery items right now, so this dish isn't too bad (makes a LARGE skillet) because it uses smoky links, which I can get for $1.79 at Save-A-Lot right now. I use Save-A-Lot's brand of process cheese too, which is $4.99 rather than the much more costly Velveeta. Can't really tell the difference between the two once it's melted into a recipe.

Smoky Hot Dish

1 lb. smoky weiners, cut into pieces
2 c. cooked macaroni (or frozen hash brown potatoes)
Good dash of onion powder (or chop about 1/4 cup of yellow onion)
3/4 c. process American cheese
3 Tbsp. flour
3/4 tsp. salt
1/4 tsp. black pepper
1/4 c. butter or margarine
1 c. milk
2 c. water
1/2 Tbsp. white vinegar
1 tsp. dry parsley

Melt butter over medium heat in a large skillet. Add flour, onion powder, salt & pepper and whisk until smooth. Cook for about a minute. Add milk, vinegar, & water and whisk until smooth. Cook, stirring constantly, until thickened. Add weiners, macaroni (or potatoes), cheese, & parsley. Cook over medium low heat until the weiners are cooked through.
