Menu Plan Monday - June 9

So..............I have begun to add animal products back into my diet a little at a time. I don't intend to go crazy with it, but I believe that going completely vegan is not always the best thing for everybody. In my situation, we cannot afford to buy meat as well as all of the vegan products I want. I was going without eating or else I would have just salads everyday. A year later, I was not as healthy as I had hoped to be. After reading Wheat Belly by William Davis M.D. and Grain Brain by David Perlmutter, I am convinced that carbohydrates (in excess) is our enemy, not fat or cholesterol. That said, I can't eat large amounts of fat or animal products because of what gluten did to my gall bladder 20 years ago. Fat and cholesterol now goes straight to my liver without the necessary filtering of the gall bladder. For those of you who still have that necessary organ, do what you can to preserve it. God put our bodies together perfectly. Sin and the "world" (Adam & Eve, GMO's and otherwise) have damaged what the Lord intended to be perfect. Here's my menu plan for the week:


Gluten-free (organic) Pasta with Italian Sausage
Green Beans


Beef Stew in the slow-cooker


Quiche (without the pie crust)


Oven-fried Chicken
Mashed Potatoes (going to try to sneak in some Jerusalem Artichokes)
Brussels Sprouts


Pizza & Pop


Burgers on the grill
Fruit Salad
Chips & Dip

We did that too. After a period of eating a vegan diet, we began to add meat back in. I'm thinking that it would be good to go vegan for several months from time to time.
