Menu Plan Monday - December 19

Menu Plan Monday is hosted by Organizing Junkie.

This is Christmas week. I hope you're enjoying getting ready for the celebration as much as I am. Today at church, we had an awesome message of Christ's coming, taken from Galatians chapter 4. Read it - you'll be blessed.

I'd like to share with you some Italian flavored croutons. They did not come out of a bag or box, but they did come out of my oven!

To make your own delicious croutons, dice up some day old bread in the size you would like - I used multi-grain wheat bread. You could use any kind you want; gluten-free bread works just as well. Place a little olive oil (or any oil you have on hand), garlic salt (or powder if you're going salt-free), crushed basil, and crushed oregano in a large bowl. Toss the bread pieces in the oil/herb mixture well. Then spread on a cookie sheet and bake in 200 degree oven until the bread is dry and crunchy, about 25-35 minutes. Keep an eye on your croutons and don't allow them to over-cook. Cool and place in a ziplock bag or bowl with a tight fitting lid. They are great in salads or soups, or just to munch like that.

For our menu this week we're having:

Monday

Crunchy Tacos for gluten-free people
Corn Pudding (made with cornstarch rather than flour)
Chips & Salsa

Tuesday

Oven-fried Chicken w/stuffing
Baked Potatoes
Baked Acorn Squash

Wednesday

Cheese Omelets
Fruit

Thursday

Cheeseburgers
Potato Salad
Baked Beans

Friday

Pizza & Pop

Saturday- Christmas Eve

BBQ Meatballs & Smokies
Chips & Dip
Veggie Platter
Cheeseball w/crackers
Christmas Cookies & Candy

Christmas Sunday

Ham
Sweet Corn
Mashed Potatoes
Green Bean Casserole
Blueberry Pie

Dropping by from MPM. Our crouton recipes are very similar, only I use my homemade Italian seasoning blend to spice them. I also crush them up, and use them to make my hubby's favorite pork chops. Very versatile.

Good looking menu, have a great week!
