Menu Plan Monday - September 19

I had a blessed weekend. I attended the 10th annual Woman to Woman Conference, held at the Gaylord Evangelical Free Church. Wow! Lynda Randle, Katie Kniss, and Jackie Kendall were the speakers. They are all amazing women of God who truly have faith. Lynda Randle so blessed me with her music (you might recognize her from the Gaither Homecoming videos) and her testimony. Jackie Kendall has the supercharged faith that I can only dream of having. At 60, she still has an on-fire love for Christ that is catchy. Katie Kniss has been through unthinkable tragedy yet still lives to praise her Creator. I was inspired by her story. If you ever get the chance to attend a Christian women's conference, you must do so!

This week is going to be a busy one. We found more apples and I will put up apple butter and apple pie filling. Everything needs to be done by Friday night because we are going on vacation! It's the first real vacation our family's had in more than 10 years. We're renting a cabin in the upper peninsula, something we used to do when our three older children were young. Sadly, those three boys won't be coming with us. One is working full-time and the other two are in college. They're going to be dog sitting.

This week, I'm going gluten-free with the majority of the menu. Everything except the pizza is made gluten-free. Here's my fairly simple menu plan:

Monday

Chef Salads
Apple Crisp

Tuesday

BBQ Chicken Breast, grilled
Baked Acorn Squash

Wednesday

Meatloaf
Mashed Potatoes
Green Beans

Thursday

Strawberry Smoothies

Friday

Pizza & Pop

Saturday - Assemble early and bake at the cabin.

Garden Salads

Sunday

Snacky foods at the cabin

I attended a Women of Faith conference before, not sure if it the same as you spoke about, but it was truly inspiring.
