Menu Plan Monday - February 22

I hope you're all enjoying what's left of winter - I'm NOT! I am very ready for spring, but then I have no say in the matter. What I DO have a say in is our menu plan for the week, so here it is:


Shepherd's Pie made with pork


Cheesy Broccoli & Rice
Bread & Butter

Wednesday (Breakfast Night)

Cream of Wheat
Deviled Eggs


Homemade Noodles with Canned Beef
Vanilla Pudding


Oven Fried Chicken Breasts
Mashed Potatoes


BBQ Kidney Beans **

**BBQ Kidney Beans

4 cups cooked kidney beans
1 tsp. paprika
1 1/2 oz. butter
1 small onion, peeled & chopped
1 TBSP sugar
1 TBSP vinegar
1/2 tsp. chili powder
3 TBSP ketchup
3 oz. yogurt

Melt butter in a small pan. Add the onion and cook for 5 minutes. Add sugar and stir until dissolved. Add vinegar, chili powder, and paprika. Mix tomato ketchup with yogurt and add to the pan, stirring well to combine. Bring to a boil, then pour sauce over beans. Cook in a preheated 400 F oven for about 20 minutes. Garnish with parsley sprigs. Serves 4
