I don't know why I had such a hard time figuring out this week's menu plan, but I did. Maybe it has to do with sickness in our house or maybe it's because Jeff put a hole in our van's gas tank last night by driving over ice chunks in our driveway (didn't notice it until I filled the tank tonight - bad, bad, bad). My mind has been anywhere but on a menu plan. While I have no idea what we're going to do about the gas leak in our only vehicle's tank and I can't heal everyone of the flu, I am still going to give this a try.

I am enjoying my trip especially for the fact that dinner is being made FOR me every night! Happy Monday!
Taco potato pie.. will have come back and grab the recipe for that.
Sorry about the hole in your gas tank.
Hey...those holes punched into gas tanks can be explosive. I'm glad you're all ok. I hear they don't usually repair them, as it's a little dangerous...unless you find the right guy, like we did once. As he was welding it up, his guy told us he'd been blown out of his building already doing stuff like that before. (We quickly moved out of the way.)
I hope everyone is better soon.
