Menu Plan Monday - Game Warden Favorites


This week I've chosen my most of my menu from the Indiana Conservation Officer's Cookbook. We have some friends who are Indiana game wardens and one one of them gave me this cookbook about 15 years ago. I've used it a lot these many years. I have to add, though, that I haven't made many of the wild game recipes. With names like Breaded Turtle Steak and Bambi in the Garden Chili, can you blame me? Anyway, without further ado, here's the plan. Recipes are included below for items marked with *.

Monday

Cheesy Chicken and Rice Casserole
Butternut Squash, smashed with butter
Macaroni Salad
*Chocolate Gravy*

Tuesday

Cheese Quesadillas
Corn
Fruit
Possibly chocolate cake (if I feel like making it)

Wednesday

Baked Sweet Potatoes
Swiss Steak
Green Beans

Thursday

Pizza & Pop

On Your Own

*Chocolate Gravy*

1/2 stick margarine or butter
1 cup sugar
1/4 cup cocoa
1/4 cup flour
1 1/2 cups milk OR 3/4 cup water & 3/4 cup milk

Melt margarine (or butter) and sugar together in pan. Add chocolate and milk. Bring to a boil. Make thickening with flour and water, about 1/4 cup flour to 2/3 cup milk. Add to chocolate mix and stir until thick. Serve over biscuits or as a pudding. Serve hot or cold.


*Shaker Beans*

4 cups navy beans
1/2 cup butter or margarine, melted
1/2 cup molasses
1/2 cup catsup
2 tsp. salt
2 tsp. dry mustard
1 small onion

Wash beans; soak overnight. Simmer in soaking water until tender. Drain beans; reserve liquid. Put beans into 2 1/2 quart bean pot. Combine with water, molasses, catsup, salt, mustard and onion. Stir in 2 cups of reserved bean liquid. Pour mixture over beans. Cover. Bake at 300 degrees F. for 3 hours. Add more liquid if necessary. Remove cover the last half hour. Yield: 10 to 12 portions.


*Zucchini Patties*

1 1/4 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1/2 tsp. sugar
1/2 cup sour cream
1 egg
1 Tbsp. vegetable oil
3 cups grated zucchini
1/2 medium onion
Pepper to taste

Combine flour, baking powder, salt, baking soda, sugar, sour cream and egg. Beat until smooth. Stir in zucchini and onion. Pepper to taste. Drop by spoonfuls into hot vegetable oil. Turn when golden brown.

Don't forget the biscuits with the chocolate gravy...believe me you will love it! It tastes kind of like chocolate pie!
