Menu Plan Monday - November 23



We had a wonderful Thanksgiving/Ingathering at our church this morning. I was so blessed - from our own Newell and Colleen Cerak's testimony (they had never really given a formal testimony to our church), to the baptism, child dedications and the great music. The spirit of God was there! Then we all enjoyed the annual ingathering dinner - a feast of turkey, mashed potatoes and all the trimmings. The cooks at the church are so great that I took a lot of my recipes for this week's menu from the Gaylord Evangelical Free Cookbook!

How can my day be spoiled after that? Well, I have been hit by a nasty cold virus tonight and I am MISERABLE! Hopefully this menu that I have planned will work and I will be able to pull it off.

*Beef Nacho Casserole

1 lb. ground beef
1 (12 oz) jar salsa
1 cup frozen or canned corn, drained
3/4 cup Miracle Whip
1 T. chili powder
2 c. crushed tortilla chips
2 c. shredded cheddar or co-jack cheese

Heat oven to 350 degrees F. Brown meat. Drain. Stir in salsa, corn, dressing & chili powder. Layer half each of meat mixture, chips & cheese in 2 quart casserole. Repeat layers. Bake 20 min. or until thoroughly heated. Top with shredded lettuce and chopped tomato if desired.

*Pizza Casserole

1 lb. ground beef
1/2 c chopped green or red pepper
1 (8 oz) pkg. shredded mozzarella cheese
1/2 tsp garlic powder
1/2 tsp salt & pepper
1 T sugar
1/2 tsp oregano
1 lg can pizza sauce
8 oz can mushrooms
1/2 c chopped onions
1 (8 ct.) pkg. crescent rolls (I'll make home-made dough)
3 T melted butter

Brown ground beef and onion. Drain. Add peppers, garlic powder, salt, pepper, sugar, oregano, pizza sauce & mushrooms. Simmer 5 to 10 min. Put into a 9x13 inch pan. Sprinkle with shredded cheese. Spread 8 crescent rolls on top. Brush with butter. Bake 15 min. at 450 deg. F or until golden brown.

  1. I have decided to forgo a menu for this week. We will all be all over the place and I just don't even know what or when we will be eating.
