Are you a big fan of coconut oil? Maybe you've tried it before but weren't too impressed. Maybe you just needed to try a better brand.
I was eager to try Tropical Traditions again, as I originally tried it in my homemade cold pressed soap. It did a wonderful job and I was happy to be  using something organic for a skin product. This time, however, I wanted to try the virgin coconut oil in food - and I did just that.
The first thing I noticed is the brilliant white color of the oil. The cheaper stuff at the grocery store is not organic nor is it virgin oil - and it's color is an off white that is nearly yellow. I'm not sure if that means anything or not, but the organic, virgin coconut oil is purer looking just because of the whiteness. Also, Tropical Traditions has a sweet coconut smell that makes you want to take a spoon and eat it out of the jar. I did not do that, however.
 
I made a delicious vegan and gluten-free dessert which I have named Blackberry Surprise Pie. Here's what I did:
Take 1 1/2 cups pitted dates and soak them in water for about an hour. Take another 1/2 cup pitted dates and soak them in a separate bowl, in water, for that same hour.

After the dates have soaked, put the 1 1/2 cups dates, 1/4 cup carob powder, 3 Tablespoons Tropical Traditions Virgin Coconut Oil (melted), 1 cup shredded, unsweetened coconut, and 1/4 cup walnuts in a food processor. With the S blade, process until the mixture is very smooth. You might need to stop the processor and stir with a spoon every now and then.

Press the mixture into a 10 inch pie pan, pressing it up the sides. Set aside while you make the filling. Don't bother washing or rinsing the food processor bowl. Put in it:

2 ripe, peeled and pitted avocados and the 1/2 cup soaked dates. Process until smooth and creamy. Place into a large bowl. Stir in 2 teaspoons Stevia powder and 4 cups fresh or frozen blackberries. Fill the date/coconut crust with the blackberry mixture. Sprinkle with a little more shredded coconut. Refrigerate until ready to serve. 

This is the best "pie" I've had in a long time. The filling color will have a green color to it but it does not taste like avocados in the least. It tastes like a chocolate/fruit pie with lots of coconut chewiness and flavor bursting through. And the best part is there is NO refined sugar.

  11. I think I would use it for several things including the usual use cooking and baking. I've heard that coconut oil makes great after shave and helps remove puffiness around the eyes as well. Likely use for bug bites as well..mrdaniel5000@msn.com

    THIS is JUST the site I've been searching for and now I'm already a Winner! I moved to Florida from CT a tad over a year ago. Drs in CT told me I had arthritis, was over weight (duh! how to move if in constant pain?) and was getting old (61). Florida was warm to live out my old days. NOT SO! Drs here are amazing and know how to treat the whole patient! I had 3 cervical discs infringing on my spinal cord (surgery fused one, took 85% of pain with it). I needed a hip so badly, I was rushed to surgery (goodbye pain, walking & losing weight). Neck and shoulder pain? Breast reduction surgery. Now, I still have arthritis and other problems, but Drs have helped me so much, they have made me a believer that I'm NOT old, after all! With some red high lights in my hair, a new step in my walk, joined the Red Hats and eating healthier every day. I've learned about Coconut oil and found this site. The question is, What would I use it for? Besides the obvious in cooking, well,,, although the breast reduction went well, there have been some normal complications with healing. While attending to wounds, I also work on scars daily. Coconut oil is, I believe the best route to take even over vitamin E oil. 3 surgeries in one year have, yes, left me with scars. Rehab has worked into my schedule too so I am right away ready to seriously get to work on a Virgin Coconut Oil regimen both inside AND outside of my body!

    I subscribed to the news letter because I want to try this Coconut oil. I have been buying a different kind from my local health food store and love how it makes my skin feel. I use it right after shower body moisturizer. I use it mixed with brown sugar as a facial and body scrub, and to moisturize my hair if needed. I can't say enough good stuff about the coconut oil. I am looking for quality though and have heard this company is best and would love to try before I buy. I would also like to buy in bulk if I do like it. cmcrawford08@yahoo.com
