This is election week here in the States. All of you registered voters please, please, please - go out and vote. It's important and it's also a privilege. Exercise your right to vote!
This week I'm planning an easy menu because, well, I'm just plain tired and don't need extra work right now. The herb roasted chicken for Saturday will be done in the slow-cooker. The corn soufle for Thursday is also easy - put some corn into a microwavable bowl, add corn bread mix (I use homemade), a couple tablespoons of butter, about a half cup of milk, one egg - and voila! Bake in microwave for about 20 min. It's good.

Corn souffle sounds yummy. I have never made souffle before :/
