Menu Plan Monday - May 21


Is it summer where you are? It has been unseasonably warm here and I'm actually loving it. My garden is growing, though I have only put out the colder weather crops - we have to wait until the end of May to be safe. Even then, we often find we're rushing out at night to cover the garden because of a frost or freeze warning. Yesterday I started some seeds in containers so that I can bring in the pots when chance of frost hits: lavender, basil, thyme and cumin. I'm so excited! I also planted some onions yesterday as they can take a good frost or freeze and still grow nicely.

On Your Own 

*Easy Parmesan Chicken Breasts*

6 boneless skinless chicken breasts
1 cup mayonnaise
1/2 cup grated Parmesan cheese
1 cup stuffing mix, crushed
1/2 tsp. salt, opt.
1/2 cup melted butter or margarine

Wash chicken breasts and pat dry. Combine mayonnaise and Parmesan. Coat chicken with mayonnaise and cheese mix. Roll in stuffing mix and salt. Place chicken breasts in a foil lined baking pan. Drizzle melted butter over tops of chicken. Bake in preheated oven (400 degrees) for 45 minutes or until juices run clear. Serves six.

You had me at "milkshake"! :) I'm going to have to try to make potato soup sometime - that's such a homey, comforting meal to have!
