Menu Plan Monday - March 7

We're getting closer to spring - can you feel it? Along with some traditional spring cleaning, I've been studying up on how to bring all of our diets together into common meals. I'm struggling. As is, my daughter's and my gluten intolerance come out about even with my husband's diabetes. They are the two diets I'm going to concentrate upon the hardest right now. My second oldest son is a vegetarian and I know that diet would work well for all of us, but all of us can't seem to embrace it (talking about hubby mostly). 

I am learning that counting carbohydrates is more important than counting sugar intake. Sugar is not off limits to diabetics - did you know that? Sugar is a carb and must be counted as such. Anyway, I chose some recipes from the Fix it and Forget it Diabetic Cookbook. Other recipes are from the Incredible Edible Gluten-free Food for Kids cookbook. I found both books at the library.

Amazing menu! I can see where you would have a struggle with your menus.
