Giveaway - Tropical Traditions Coconut Flour

Giveaway time again!


Tropical Traditions graciously supplied me with a bag of organic coconut flour. Today, I made Gluten-free Coconut Flour Flax Bread. My finished product didn't look exactly like the one pictured with the recipe, but it did taste very good. I am planning to make Gluten-free Coconut Flour Chocolate Cake - as soon as I get more eggs (you'll know why when you see the amount of eggs needed). A few interesting facts about this coconut flour:

  • It is made from coconut meat that has had most of the oil extracted for virgin coconut oil.
  • It is certified organic and is unsweetened (though it has a natural slightly sweet taste, in my opinion).
  • It is not treated with sulfites.
  • It is gluten-free.
I've noticed that many recipes call for coconut flour as the only flour ingredient. That's great for me. I think it's a real pain to have to mix together three or four different flours just to make one recipe of anything gluten-free.
