Menu Plan Monday - August 10


Another week has flown past and it's time to post menus again. Our son, Jonathon, will be home sometime on Monday so I must remember to include plenty of vegetarian meals this week. This leads me to wonder how he liked the food in Africa - I know they had fish with heads and tails left on one night. I wonder if Jonathon felt he had to eat some? That would be worth watching!

A lot of my meals this week come from the Conservation Officers Cooking T.I.P.S. cookbook that I've owned for many years. Before posting my menu, I want to share some interesting things from that cookbook.

Probably the best words in the book are of this quote from Will Rogers: "Rumor travels faster, but it don't stay put as long as truth." I love it because it's quite TRUE!

Some of the recipes have names like, Beaver Stew, Ben's Best Rabbit, Baked Deer Heart, Roast Beaver A La Indiana, and my favorite, Crickbank Taters. Here's a recipe for Elephant Stew:

1 elephant
1/2 pail pepper
2 pails salt
4 bushel onions
93 1/2 gallons water
6 pails flour
2 rabbits (opt.)

Cut elephant into bite-size pieces. This should take about 4 months. Cook (with other ingredients) over kerosene fire for approximately 4 weeks or until tender. This will feed 3,000 hungry hikers. If more are expected add the rabbits. But do this only if necessary, as most people don't like hare in their stew.

Fried rice with sauteed zucchini & basil
Toasted flatbread with garlic butter

On your own

Banana Bread

3 ripe bananas, crushed
3/4 cup sugar
2 eggs
2 cups plain flour
1 tsp soda
1 tsp salt
1/2 cup nuts (opt.)

Mix ingredients in blender or food processor. Pour into greased loaf pan. Bake at 325 degrees F for about 1 hour.

Oven Barbecue Venison Meatballs

1 lb. ground venison
1/2 lb. ground beef
3/4 cup oatmeal
1 cup milk
1/3 cup onions, diced
1/2 tsp salt
1/2 tsp pepper
1 cup catsup
1/2 cup water
2 Tbsp brown sugar
2 Tbsp vinegar
2 Tbsp Worcestershire sauce

Mix together ground venison, ground beef, oatmeal, milk, onions, salt, & pepper. Make into meatballs. Put in casserole or a 9x13x2 inch pan. Mix together catsup, water, brown sugar, vinegar and Worcestershire sauce. Pour over the meatballs. Bake at 375 degrees F for 1 1/2 hours.

No Bake Cookies

1/2 cup milk
2 cups sugar
3/4 stick butter
4 Tbsp cocoa
2 1/2 cups oatmeal
1/2 cup peanut butter
1 tsp vanilla
1/2 cup coconut

Mix milk, sugar, butter and cocoa. Heat in pan until mixture slow boils for 30 seconds. Remove from heat and add oatmeal, peanut butter, vanilla, and coconut. After thoroughly mixing, put tablespoon sized balls on wax paper and let cool. Note: I might try subbing some crushed nuts for the coconut since I don't have the coconut on hand.

Ya gotta love those no bake cookies. I can only make them every now and then be cause I will eat them all day long until they are gone. My hips like them as much as I do:)

Welcome back Jonathon! We'll look forward to hearing about his trip, mom's perspective of course. I've seen that recipe for Elephant Stew before, I always wonder what you do with the meat while you are in the process of cutting it up. . . might take a big freezer! I also wonder if it tastes like chicken. ;)
