Menu Plan Monday - July 27


We're eating pretty simply this week. Jonathon and Evan will be gone until Tuesday (Cedar Point trip with youth group) and then Jonathon leaves on Wednesday a.m. for Mobasa. Jeff has a business meeting on Tuesday night, so he'll eat supper at the meeting that day.

I'M NOT USED TO COOKING FOR LESS THAN 7 PEOPLE!

I'll get used to it.

Here's the menu plan:

Monday

Mexican Chicken Lettuce Wraps (tacos wrapped in buttercrunch bibb lettuce from my garden)
Chips and salsa
Vanilla pudding (made with powdered milk - surprisingly good)

Tuesday

Egg salad sandwiches
Home fries
Apple and cherry pies

Wednesday

Creamy potato soup (recipe below)
Garden salads
Brownies

Thursday

Pizza & pop

Friday

Pork chops (pork tenderloin on sale at Meijer this week)
Baked potatoes
Whatever veggies are ripe in the garden
Pineapple upside down cake

Saturday

Fried chicken
Mashed potatoes
Again, ripe veggies from the garden
Rice Krispie Treats

Sunday

On your own

**Creamy Potato Soup**

7 medium potatoes, peeled and cubed
2 celery ribs, diced
1 medium onion, chopped
1 quart of water
4 tsp. chicken bouillon granules
1/4 cup butter
1/4 cup all-purpose flour
2 tsp. salt
1/2 tsp. pepper
1 quart milk

In a kettle, combine potatoes, celery, onion, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are tender. Cool slightly. Place half of the potato mixture in a blender; cover and puree. Repeat with remaining potato mixture. Set aside. In the same kettle, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk; bring to a boil. Boil and stir until smooth, about 2 minutes. Return puree to pan and heat through. This is a family favorite and something even the picky eaters devour.

I find having a menu planned for the week has become such a blessing. My family now will say,,'what's for dinner' and before I answer, they check the fridge where I have posted our month's menu..lol

Hey the vanilla pudding sounds good and easy. It's on our menu now too! ;) I love the Hillbilly Housewife, such great ideas.
