Menu Plan Monday - May 4


This week is a bit of a challenge. I keep finding all of these great recipes I want to make but can't because I lack an ingredient or two. Not wishing to spend yet more money at the grocery store, I will have to modify my desires and be satisfied with this:

**Chocolate Bread**
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1 1/2 cups all-purpose flour
1/2 cup baking cocoa
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup buttermilk
1/3 c. chopped pecans (opt.)

Mix together all ingredients until smooth. Pour into a bread loaf pan that has been greased. Bake in preheated 350 degree F oven for about 30 min. or until toothpick inserted near center comes out clean.

**Creamy Potato Soup**

7 medium potatoes, peeled and cubed
2 celery ribs, diced
1 medium onion, chopped
1 quart of water
4 tsp. chicken bouillon granules
1/4 cup butter
1/4 cup all-purpose flour
2 tsp. salt
1/2 tsp. pepper
1 quart milk

In a kettle, combine potatoes, celery, onion, water and bouillon; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until potatoes are tender. Cool slightly. Place half of the potato mixture in a blender; cover and puree. Repeat with remaining potato mixture. Set aside. In the same kettle, melt butter. Stir in flour, salt and pepper until smooth. Gradually add milk; bring to a boil. Boil and stir until smooth, about 2 minutes. Return puree to pan and heat through. This is a family favorite and something even the picky eaters devour.

**Homemade Bread**

1 cup very warm water
2 Tbsp. butter or margarine, softened
1 tsp. salt
2 Tbsp. sugar
2 Tbs. nonfat dry milk
3 cups all-purpose flour
2 tsp. active dry yeast

Pour water into mixing bowl and add yeast. Allow yeast to bubble - about 5 minutes. Add butter, salt, sugar, milk powder and 1 cup flour. Beat well. Add remaining flour and mix with a dough hook or by hand. Knead for about 10 minutes. Place dough in greased bowl, turning to grease the other side. Cover with a towel and place in a warm spot for about 1 hour, or until doubled. Punch dough down and place on lightly floured surface. Roll dough with a rolling pin in a rectangle. Roll into a loaf pan size and place in greased loaf pan. Cover with a towel and place in warm spot for 1 hour, or until doubled. Bake in preheated 400 degree F oven for 30 minutes or until golden brown. Cool for 5 minutes on cooling rack. Then tap loaf out of pan and cool.

funny! We usually do our pizza and movie night on Fridays! Nice to see someone else plans a pizza menu each week :-)

Did that say chocolate bread!!! Wow!! I made the chocolate peanut butter cake last week and it was a hit, I'll have to try the chocolate bread soon.
