Menu Plan Monday - April 20


Boy, the weekend sure fled. I went through the cupboards and freezer again to see what I can plan for dinners this week and, for the amount of money I spent in groceries, it doesn't appear that we have much. Still, we are blessed to have good meals. Creativity is key.

Monday

Grilled ham & cheese waffles *Directions below*
Home fried potatoes
Strawberry cheesecake (splurge item - cream cheese is expensive, but strawberries were on sale for $1.50 a quart)

Tuesday

Roast Turkey
Mashed potatoes
Corn
Apple pie (I have lots of filling canned)

Wednesday

Tacos (I found pkgs. of 12 soft taco shells for $0.99 at Gordon's, so I'm not making my own this week)
Chips and salsa
Tossed salads
Applesauce

Thursday

Pizza and pop

Friday

Spaghetti with Alfredo sauce & turkey (using left-over turkey from Monday that I'll put in freezer to keep "fresh") *Instructions below*
Cottage cheese
Garlic bread
Fruit

Saturday

Meatloaf
Baked potatoes (in my new potato bag!)
Green beans
Cookies

Sunday

On your own

**To make grilled ham & cheese waffles, use your favorite waffle batter recipe or mix. Stir into batter: sliced ham chopped finely and shredded cheddar cheese - about 1/2 cup of each. Prepare waffles in waffle iron as you would make plain ones. Serve with maple syrup or honey.**

**To make Alfredo sauce (for 7 people), I melt 1 stick butter in heavy sauce pan. Then I add 1/2 cup flour and stir well with whisk. Cook over medium heat until bubbly. Add 2 cups milk and stir while continuing to cook. When sauce is thickened, turn off heat and stir in 1 cup grated Parmesan cheese.**

Do you stick with your menu for the week? I find my family tend to complain or I will cook it and it get put in the frige uneaten. So, do you converse with your family?
