Menu Plan Monday - April 13

This week we'll be using up left-overs and things I'd tossed in the freezer the past couple of months, like deboned cooked chicken. Someone told me once to freeze up left-over veggies if I only have a couple of spoonfuls here and there. I thought she was crazy, but those vegetables make the best soup when tossed together. The reason? If the veggies were seasoned or buttered, they add a lot of flavor.

**How-tos/Recipes**

Goulash

16 oz. macaroni
2 cans condensed tomato soup
1 lb. hamburger, browned
1 pint chopped tomatoes, drained
pepper
crushed basil
Cheddar cheese or Velveeta

Cook macaroni according to pkg. directions. Add tomato soup and hamburger and tomatoes. Add a couple shakes of black pepper and a pinch of crushed basil. Sprinkle on some cheddar cheese or lay a couple of slices of Velveeta on top and let melt.


Seasoned Potato Wedges

Wash and slice desired amount of potatoes into wedges. Place on a greased cookie sheet. Drizzle about a quarter cup of oil on top (amount of oil depends upon how many potatoes you use; you need just enough oil to coat but not saturate). Sprinkle with garlic powder, salt & pepper to taste. Bake for about 20 minutes in a 375 degree oven. Potatoes should be fork tender. Cook longer if need be.

Sounds like terrific advice - freezing veggies. I've been wanting to make soup but probably won't till tomorrow.
