Baked Out

For the past two weeks I have made cookies and breads like mad - for Mombasa fundraisers. Now today I baked a batch of brownies for tomorrow's homeschool group meeting. I thought I was done. Then, this afternoon, I received a call that I need to ALSO bring a treat for our neighbors who are moving away. ARGH!

I was on my feet almost all day but I got it done - plus pizza. I made peanut butter cookies for the neighbors' treat.

I have a kitchen tip for you. If you run out of brown sugar, use one cup of granulated sugar mixed with one tablespoon of molasses instead. That's all brown sugar is.

I tried to make my own powdered sugar one time, but didn't like the result. I used a cup of granulated sugar blended as much as I could get it in the blender to make it fine. Then I added a tablespoon of cornstarch. The result? Grainy stuff. I think it would have worked if I had a food processor and could get the sugar superfine.

When I bake I RARELY make small batches....Like last week, I made 6 batches of cookies. I'm hoping this weekend to make more cookies, plus some muffins. One or two dozen cookies just is NOT enough for my family, Bible Study and RCIA classes, plus passing them along to the daycare children,,lol

I thought you added Cream of Tarter to the fine sugar for powder sugar. Didn't know is was corn starch. All that cooking sounded great. I love to cook. You got me going now.
