Recipe

I thought you might like to try an easy cobbler/pudding cake recipe. This one is my mother's and its one she made a lot with the cherries we grew on our farm, but you can substitute any fruit you'd like.

Cherry Pudding Cake

Preheat oven to 350 degrees F. Combine in a bowl: 1 quart of cherries or fruit of choice and 1/2 cup sugar. Set aside.

Put in mixing bowl: 1 egg, 1 cup sugar, 1 1/2 cups flour, 1/2 cup oil (or melted butter if you like it rich), 1/2 cup milk, 2 teaspoons baking powder. Beat on medium speed until smooth and well blended.

Spread batter in greased 9 inches x 13 inches baking pan. Sprinkle fruit on top. Bake for 35-40 minutes or until a toothpick comes out clean. Great warm with ice-cream.
